In plain words
Every time you pick one thing, you give up the others, and the best of those lost options is what the author calls the opportunity cost. The point is that the real price of a choice isn't just the cash you hand over. It also includes what you could have gained by using your time, money or work some other way. So a business can look profitable on paper and still be a poor choice if you forget what those same resources could have earned elsewhere.
Example
Say you spend Saturday studying instead of working a shift that pays well. The textbook is free, so it feels like it cost nothing. But the real cost is the pay you skipped.
Check yourself
A friend says, "I got these concert tickets for free, so going costs me nothing." What's wrong with that thinking?
Even with free tickets, going costs you the best thing you could have done with that evening, like earning money or seeing another friend. "Free" only covers the money, not the opportunity cost.

From textbook to plain words.
Opportunity cost refers to the value of the next best alternative foregone when a choice is made among mutually exclusive options. Because resources such as time, money and labour are scarce, every allocation decision implies a trade-off, and the true economic cost of an action therefore includes not only explicit monetary outlays but also the implicit benefits that would have accrued from the alternative use of those resources. Consequently, accounting profit may overstate the economic desirability of an activity when significant implicit costs are ignored.
